10 Week New Meal Challenge: Week 8

For this week's meal I made a spicy chicken soup recipe I found at allrecipes.com. It reminded me a lot of a taco soup except with shredded chicken instead of ground beef. We added tortilla chips, shredded cheese, and sour cream on top. It was very good!

Here's a nice hearty soup for a cold winter night, add a loaf of fresh bread and you're set. My mom likes a glass of red wine with it, I go with white....

Beefy Barley Soup

Ingredients
1 pound cubed beef stew meat
1 tablespoon vegetable oil
2 cups water
2 tablespoons margarine
2 large carrots, diced
3 cloves garlic, minced
1 onion, chopped
2 stalks celery, chopped
1 pound fresh mushrooms, sliced
6 cups water
3 cubes beef bouillon cube
1/4 cup pearl barley
1/4 cup sour cream

Directions
1. Brown small cubes of stew meat in vegetable oil over medium heat until juices become a rich brown color. Add 2 cups water, and simmer meat while preparing the vegetables.

2. In a large soup pot, melt butter or margarine over medium heat. Saute carrots, onion, garlic, celery, and mushrooms.

Add meat, 6 cups water, bouillon cubes, and barley to vegetable mixture. Cook until barley is soft. Adjust liquid and seasoning as desired. Remove from heat, and stir in sour cream. Serve immediately.

Hi Meredith-

I know you're not vegetarian but my husband and I am. We subscribe to veggiemealmaker.com. Every Thursday, you can download 5 days worth of dinner recipes and a detailed shopping list. The site also provides cost comparisons for buying those groceries at several different stores (ie Walmart vs. Albertsons vs. Whole Foods). It costs $1.50 per week and you get 20% off for subscribing for three months. Many of the meals are very simple (which is nice for busy nights) and some are more complex. Many have turned out to be delicious! They are things like chili and cornbread, lasagna and garlic bread, etc. I'm sure you would be able to add meat to the recipes to make them fit your tastes. I think you can download a trial week on the site to see if you'd be interested. Thought this tip might help you in your meal-planning. It has been a huge time-saver for me, and has helped open my eyes to some recipes that I might not have thought of otherwise!

Janine, that sounds like a great idea. I am saving the link and will look into that. Although we are not vegetarians, it would be nice to have a lot of options that don't include meat since it can be so expensive. Thanks so much for letting me know!

This looks like a great recipe - I am a big soup person, especially when the fall winds start to blow. My neighbor is giving me a few of his chickens in exchange for some notary work I'm doing for him. I think I will try this, thanks for posting it! And all the best in your upcoming nuptuals!

I just actually StumbledUpon your blog and read your courtship story. It's amazing, I had something similar happen to me! My husband and I met online through a random chat on AOL Instant Messenger. Seriously it was random but of course it was the Lord's providence. We met online and it's just amazing at how perfect we are for each other.
